Buckwheat Pancakes (Gluten Free)

Last night we had breakfast for dinner. That is one of my favorite meals... there is something decadent and comforting about eating pancakes with syrup and eggs for dinner...

Buckwheat Pancakes
1 c buckwheat flour
1/2 c rice or almond or regular wheat flour
1.5 tsp baking powder
2 T sugar
2 eggs
1.5 c buttermilk

Mix it all up and fry on medium heat. This is very buckwheaty... perfect if you like buckwheat (like we all do) but it may be a bit much if this is your first experiment with buckwheat. Oh... and you MUST eat it with real maple syrup...
